Ingredients

  • Paste Ingredients
  • 6 candle nuts
  • 2 big chilli
  • 2 stalks lemongrass
  • 1 turmeric – 1 inch
  • 1 ginger – 1 inch
  • 1 galangal 1 inch
  • 2 red onions or 12 small shallots
  • Main Ingredients
  • 2 teaspoons tamarind paste
  • 1 teaspoon fenugreek seeds
  • 2 tablespoons coriander powder
  • 1 tablespoon cumin
  • 2 tablespoons raw sugar
  • ½ teaspoon nutmeg powder
  • 1 stick of cinnamon
  • 2 star anise
  • 6 kaffir lime leaves
  • 5 cloves
  • 4 cardamom pods
  • 1 teaspoon pepper
  • 2 teaspoons salt
  • 33 oz water 1 litre
  • 14 oz coconut cream 400g
  • 3 tablespoons oil

Instructions

  • While there are lots of ingredients the method is really quite simple.
  • Slice the turmeric, garlic, ginger, galangal, and red onion and put in a food processor
  • Peel the outer layer of the lemongrass and chop off the ends. Give the lemongrass a bash with the end of the knife to help release the flavor
  • Slice open the chilli and deseed them (because if we leave in the seeds it may make it too hot) and then slice them and add to the food processor
  • Also, add some of your water just to make it easy to blend into a paste.
  • Slice the meat into large pieces (see picture)
  • Turn on the instant pot to saute hot and add some oil.
  • Tip in the paste and cook for about 3-4 minutes stirring well. You can tell when it is cooked as the fragrant smell arrives and the color darkens slightly.
  • Then add in coriander and cumin powder and continue stirring.
  • Next take the kaffir lime leaves and crush them in your hand as you add them.
  • Now add all the other ingredients adding last the beef, water, and ½ the coconut cream.
  • With the liquid added – again stir well so that the paste is mixed in with the liquid.
  • Cook on high pressure for 30 minutes and 10 minutes natural release
  • After cooking add the rest of the coconut cream and bring to a boil for about 2 minutes
  • Then cut up the beef and add to the soup along with some rice

Notes

Can Also serve with some crakers like saltines
