Food Process The Paste Ingredients

Peel the outer layer of the lemon grass and chop off the ends. Give the lemon grass a bash with the end of the knife to help release the flavor. (again see the video)

Slice open the chilli and deseed them (because if we leave in the seeds it may make it too hot) and then slice them and add to the food processor.

Also add some of your water just to make it easy to blend into a paste.

Make The Paste

Then add in coriander and cumin powder and continue stirring.

Next, take the kaffir lime leaves and crush them in your hand as you add them.

Now add all the other ingredients adding last the beef, water and ½ the coconut cream.

After Cooking The Next Steps

With the liquid added - again stir well so that the paste is mixed in with the liquid.

Cook on high pressure for 30 minutes and 10 minutes natural release.

After cooking add the rest of the coconut cream and bring to a boil for about 2 minutes
add coconut milk to curry
slice the meat

Prepare The Beef

Then cut up the beef and add to the soup along with some rice

Plate Up

The time consuming part is making the paste - with the pressure cooker no need to boil for hours.

This is worth making you can not believe just how amazing the flavor is - just consider all the ingredients and how they work together to bring such a beautiful dish.
