What is Beef Brisket?
If you’ve had corned beef or even pastrami, then you’ve had brisket. This large piece of flavor-packed beef is often cured or smoked or in this case, pressure cooked.  It’s also one of the best cuts for braising and slow cooking and pressure cooking.
The Brisket comes from the breast of the animal, under the first ribs. It is a fairly large cut that is sold boneless and usually weighs anywhere from 8 to 18 pounds, making it quite a hefty-sized cut. However, you can always get a precut size that is less.

Bourbon

When it comes to cooking with liquor, bourbon is one of the best in fact it is one of our favorites. Its smoky and caressing caramel with a hint vanilla flavor adds a special nuance to this beef dish. Do not skip the bourbon it really enhances and lifts the whole dish.

Paprika

Paprika in its simplest form is made from ground sweet pepper pods to make the well-known bright red powder. But depending on the type of paprika, the color can vary from a orange-red to a blood red and the flavor can be anything from sweet-mild to smoked, bitter, and hot.

Molasses

Molasses adds moisture and color to baked and cooked dishes. Plus it thickens up barbecue sauce for meat like pulled pork or ribs.

Why – because when you have never made a recipe before – having all your ingredients ready means that you can firstly check them off against the recipe before you start so that nothing is missing.

Ingredients

Sauce Ingredients

  • 1/4 teaspoon Onion powder
  • 1/4 teaspoon Garlic powder
  • 1/2 teaspoon salt
  • 1 tablespoon Smoked Paprika
  • 1 pinch Cayenne Pepper
  • 1 cup Ketchup
  • 1/2 cup Vinegar
  • 1/2 cup Molasses
  • 1/2 cup Honey
  • 1/2 cup Bourbon
  • 2 tablespoons Brown Sugar

Beef Recipe

  • 3 pounds Beef Brisket 1.4 kg
  • 1 Onion
  • 5 cloves garlic
  • 2 Sprig thyme
  • 2 Bay Leaf

Instructions

  • Brown the brisket sides by setting the instant pot to sauté high temp
  • Set aside in a bowl to rest
  • Make the BBQ/bourbon sauce
  • Put all the sauce ingredients into the instant pot-stirring and mixing well
  • Bring it to a simmering boil by setting the instant pot to sauté high temp
  • Simmer for about 10 minutes stirring every 30 seconds. Simmer until the sauce mix starts to thicken you will also notice that the sauce also starts to darken in color just as it starts to thicken (see pictures below)
  • Now pour out the sauce into another bowl – leave a very small amount in the instant pot bowl to flavor the brisket
  • Cut the onion in half and place the two halves and the peeled garlic into the instant pot bowl
  • Pour in the beef stock and mix turning the beef to ensure that it is well wet
  • You can add a little more sauce on the top of the beef for flavor
  • Cook for 75 mins high pressure and 10 mins natural release pressure
  • Take out the cooked brisket and let it stand.  You can (but not absolutely necessary) put it in a roasting dish – using a brush cover the brisket liberally with sauce. Put in an oven for about 10 minutes to bake in the sauce at about 350 F or 180 C
  • Then carve and serve with your favorite side dishes

This is a really flavorsome and you will be delighted and you can do it so easily in the pressure cooker.

Can You Over Cook Brisket

You can overcook a beef brisket so it is best to follow a proven recipe until you get your own experience. Cook the beef for too long, the meat can go from pull apart tender to incredibly tough so take care.
