The words "osso buco" translate literally, “bone with a hole"

It originated in Italy in the Lombardy region in the 19th century. 

It is a classic or rustic veal stew.

What Kind Of Meat Is Osso Bucco?
The Meat is Beef.   Osso Buco uses Beef Shanks that are cross cut.
It is a traditional Italian dish topped with fresh parsley, garlic, and orange zest.

The primary ingredient is veal shank. Partially because it is relatively cheap and rather flavorful. Although tough, pressure cooking or braising makes it tender. 

Is Osso Bucco Beef Or Veal

The original or traditional version of this Italian favorite is prepared using veal shanks. However, beef shanks are equally good.

What Does Osso Bucco Taste Like?

The taste is of rich meat which also comes from the bone marrow.  The flavor is complemented by the dense tasting sauce of red wine, rosemary, and tomato paste.  I also not that using a  lamb shank osso buco with gremolata is also a great alternative.

Prepare Your Ingredients

Now Get All your ingredients prepared so you can concentrate on making the recipe.

Prep time will be about 15 minutes for these. 

Flour The Beef 

Dust both sides of the beef with flour.  This helps add to the flavor when browning and also slightly thickens the rich gravy.

Saute The Meat and Then The Vegetable

Now Turn the instant pot to high saute.  Add the beef and saute each side for about 2-3. minutes.

Then take out and cook the onion and garlic first, followed by adding the carrots and celery.

Add In The Other Ingredients

Add and stir in the tomato puree.

Add in white wine and bring to boil.

Add in Beef stock and Worchester sauce.

Put the beef back in and also mix it to get all the flavors around it.  Put a little salt and pepper to taste.

Now add the Bouquet garni-  1 sprig of rosemary, 5 sage leaves, 2 bay leaves. Tied inside a muslin cloth

Cooking Osso Bucco In An Instant Pot

Set to high pressure for 30 mins with 10 mins natural pressure release.

I really like the depth of flavor that this dish has.

Garnish with a gremolata if you have it- this adds extra taste and a nice texture.

How to make a gremolata - one lemon zest, fresh parsley finely chopped, plus 2 cloves of garlic finely chopped.

  • 4 tablespoon plain flour
  • 4-6 Veal Shins / Osso buco can also use beef ribs/oxtail
  • 4 tablespoon olive oil
  • 2 onions finely chopped
  • 2 carrots finely chopped
  • 2 celery stalks finely chopped
  • 1/2 cup white wine
  • 1 tablespoon tomato puree
  • 1 clove garlic
  • 3 cups beef stock
  • 1 tablespoon Worchester sauce
  • Bouquet garni
  • 1 sprig rosemary
  • 5 sages leave
  • 2 bay leaves

  • Tied inside a muslin cloth

Instructions
