You can also check the expiration date (sometimes a best-by-date) on the carton. If it says “sell by,” that means that the product isn’t shelf stable and must be refrigerated. If it says “best used by,” that means that it’s best consumed within three months of purchase.

To test whether a particular brand of almond milk is still safe, take a small amount of it into a cup of water and stir it vigorously. You’ll want to do this in a glass container because plastic containers can leach chemicals into the milk.

After stirring, let the mixture sit for 10 minutes, and you’ll notice that the milk separates into layers. This indicates that the milk has separated into cream and solids. If it hasn’t done this, the milk is probably still okay to consume.

What Makes Almond Milk Go Bad

Almonds contain enzymes called polyphenoloxidase (PPO). These enzymes break down proteins and cause the milk to separate out – you would call this spoiled milk. When you put the almond milk in a bottle, the PPO breaks down the proteins in the milk, causing the milk to separate. As long as the milk stays sealed, it’ll remain drinkable. However, once you open the bottle, the milk begins to ferment. Fermentation produces alcohol and carbon dioxide, both of which increase the acidity of the milk. Over time, the increased acidity causes the milk to become unpalatable.

So in conclusion – When almond milk goes bad, it smells funny and gets lumpy, and needs to be discarded.

– Almond milk must pass an appearance test before it’s ready for consumption.
