Chiyodomari loved cooking and enjoyed eating delicious foods. One day, she decided to experiment with different ingredients. She mixed together with rice, vinegar, sugar, salt, and soy sauce.
She then placed this mixture in a bamboo basket and left it outside to ferment. After several days, she found that the mixture had fermented and turned into something similar to today’s sushi.

It all started when a Buddhist monk named Kojin introduced rice vinegar to Japan during the Nara period (AD 700’s). He noticed that the rice he ate tasted better after being soaked in water and then left to ferment.
He took his discovery to Emperor Shomu, who liked the taste so much that he ordered Kojin to start making rice vinegar at the Imperial Court.
Kojin later opened a shop selling his new product, and the rest is history.
