This recipe is from Kozani which is a town in the Greek Macedonia region.

This region is famous for its saffron. 

This chicken dish is popular in many parts of Europe but is thought to have originated from Greece.

Kozani chicken is a greek disk that is loaded with amazing ingredients like prunes, fragrant saffron, and paprika
This recipe has been made famous by Rick Stein.  We have added one or two ingredients and adapted the recipe for the pressure cooker and instant pot.


This dish really is so simple to make and can be served with many side dishes.

What does paprika taste like? 

The taste from paprika does change depending on if it is mild or sweet through to hot.  Plus it also depends on the type of peppers used. 

What is the texture of paprika?  The texture is very fine.

What is paprika made of?  Bell Peppers are usually used for sweet paprika.

What does saffron taste like?

The taste of saffron is sweet with a floral taste to it. Plus is is a complex flavor with subtle earthy tastes as well.. 

What do prunes taste like?

Prunes taste very similar to a plum. But with a sweetness that is brought about how they are made in the drying process.

Prepare Your Ingredients

It really does help to get organized by getting all your ingredients measured and organized first. 

Why - because when you have never made a recipe before - having all your ingredients ready means that you can firstly check them off against the recipe before you start so that nothing is missing. 

Secondly - as you are moving through the cooking steps it lets you focus on the dish preparation rather than jumping around looking for or preparing a missed item. 

Slice the Onion

We decided to use red onions, but either is fine. The red onion taste is not quite as strong.

Also finely chop up your garlic.

Turn On The Instant Pot To Saute

Turn on the instant pot and when hot add 1-2 tablespoons of olive oil. 

Then add the onions and garlic and cook then for about 3-5 minutes

Add In The Rest Of The Ingredients

First Add in the paprika and give it a nice mix.

You can add some of the chicken stock to help it mix in.

Add The Salt and Pepper 

Add in the Rest of the Chicken Stock plus the salt and pepper and stir again

Lastly Add The Saffron And The Prunes

Next add the about 10 strands saffron and the prunes and stir gently but well

Cook The Konzani Chicken


Put the lid on the instant pot and cook for 12 mins with 10-minute natural release.

Plating Up To Eat

I really like the depth of flavor of this dish - the saffron, prunes, and paprika make a divine combination.

You can serve with the traditional rice, or we decided with new potatoes and almond stir-fried crunchy green beens.

Ingredients

8 skinless chicken thighs

1.5 cups chicken stock

1 pinch saffron

4 tablespoons olive oil

3 red onions finely sliced

2 cloves garlic chopped finely

1 ½ tablespoon sweet paprika

20 pitted prunes

1 teaspoon salt

¼ teaspoon ground black pepper


Instructions

  1. Finely slice the onion
  2. Finely chop the garlic
  3. Turn on the instant pot and when hot add 1-2 tablespoons of olive oil
  4. Then add the onions and garlic and cook then for about 3-5 minutes

  5. Then add all the other ingredients with the paprika first and some of the chicken stock

  6. Add in the Rest of the Chicken Stock plus the salt and pepper and stir again

  7. Next, add about 10 strands of saffron and the prunes and stir gently but well

  8. Put the lid on the instant pot and cook for 12 mins with 10-minute natural release
