Ingredients
8 skinless chicken thighs
1.5 cups chicken stock
1 pinch saffron
4 tablespoons olive oil
3 red onions finely sliced
2 cloves garlic chopped finely
1 ½ tablespoon sweet paprika
20 pitted prunes
1 teaspoon salt
¼ teaspoon ground black pepper
Instructions
- Finely slice the onion
- Finely chop the garlic
- Turn on the instant pot and when hot add 1-2 tablespoons of olive oil

Then add the onions and garlic and cook then for about 3-5 minutes

Then add all the other ingredients with the paprika first and some of the chicken stock

Add in the Rest of the Chicken Stock plus the salt and pepper and stir again

Next, add about 10 strands of saffron and the prunes and stir gently but well

Put the lid on the instant pot and cook for 12 mins with 10-minute natural release
