Greek Chicken And Prunes Instant Pot

Ingredients
- 8 skinless chicken thighs
- 1.5 cups chicken stock
- 1 pinch saffron
- 4 tablespoons olive oil
- 3 red onions finely sliced
- 2 cloves garlic chopped finely
- 1 ½ tablespoon sweet paprika
- 20 pitted prunes
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- Finely slice the onion
- Finely chop the garlic
- Turn on the instant pot and when hot add 1-2 tablespoons of olive oil
- Then add the onions and garlic and cook then for about 3-5 minutes
- Then add all the other ingredients with the paprika first and some of the chicken stock
- Add in the Rest of the Chicken Stock plus the salt and pepper and stir again
- Next, add about 10 strands of saffron and the prunes and stir gently but well
- Put the lid on the instant pot and cook for 12 mins with 10-minute natural release
