Generally speaking, we recommend using about 1/2 pound of meat per dozen tamales. So, if you want to make 24 tamales, you’ll need about 1 pound of beef.
Of course, depending on your preference, you can always use more or less meat. Some people like their tamales to be mostly meat, while others prefer them to be mostly masa (the corn dough that forms the tamale’s base).
