Baking soda

Baking soda needs to be combined with an acid to have a proper effect on the mixture. If you add lemon juice to baking soda, It’ll make carbon dioxide, which fills the bread with air, just like yeast.

Double-Acting Baking Powder

Double-acting baking powder is a combination of both baking soda and cream of tartar. Since it already contains acid, you only need moisture and heat to activate its effect.

It can get moisture when you mix the wet ingredients with the dry ones. Once the heat of the oven hits your dough, you’ll get the fluffy texture you’re looking for.

Wrapping it up

When baking bread or making pizza dough, it is important that you use the correct amount of yeast. If you don’t use enough yeast, then your bread won’t rise properly and you’ll end up with flatbread instead of fluffy loaves. If you use too much yeast, then your bread will rise way too fast and you’ll end up having to wait hours before eating your delicious loaf. This is why it’s so important to measure out the right amount of yeast or know exactly how much is in a packet.
