Roux - you are kind of using the method of making a roux to reheat the pasta and old cream sauce.

Bring the milk to a boil in a frying pan. Add the roux and let it bubble away for one minute. Whisk constantly.

  2. Even add a knob of butter, olive oil to the reheated pasta.
  3. Heat the milk or cream until simmering. 
  4. Preheat the pasta using a Microwave for 10 seconds
  5. In goes the pasta and stir well into the pan of simmering milk

This method gave me the best results by far. The other methods could bring back the texture, but the flavor was lackluster.

My theory is that the heat reactivated the garlic and helped bring out its flavor.

  1. Put 3 inches of water in your deep pan or saucepan and bring to the simmer level
  2. Make a double boiler by placing a glass or stainless steel bowl on top of the pan
  3. Keep the steam in having a good seal. Avoid direct heat by ensuring there is a gap from the bottom of the bowl to the simmering water in the pan.
  4. Put the leftover pasta in your stainless steel bowl plus slowly add your choice of milk, cream, or chicken broth.
  5. Stir for a few minutes until the steam from the water starts working and heats it.
  6. Continue to stir until the sauce becomes liquid and releases from the leftover pasta. Keep stirring so you work in the extra milk or cream you added.
  7. Check the pasta for consistency and add some more liquid if it looks dry.
