  • Internal Sausage meat temperature has reached 160F (70C)

This is really the key test is a chicken sausage cooked because cooking time will vary in temperature so much you can not rely on it.

  • boiling

but the main way is baking them in an oven cooking at 350-400F. The temperature is dependant on the sausage. This works really well with

these oven temperatures work really well for not splitting the sausage skin. You will find between 15-20 minutes should be about right for a fresh sausage – but you will need to experiment with your own oven and you own sausage link.

Another way to stop the sausage skin splitting is to use boiling water

Boil the sausages for 20 mins, depending on how thick they are. After 20 minutes they will be cooked inside and the skins should be intact. The next step is to sear the outside in a hot skillet with a little olive oil. This will brown them up and is a good way to cook sausages without splitting. This is also a good way to pre-prepare a grilled sausage.

If you want to add more flavor try adding beer, garlic, and herbs to the water.

Furthermore, you could add some spices such as cumin, cilantro, paprika, etc.

You can also marinade the sausages overnight in a mixture of soy sauce, honey, ginger, garlic, chilies, black pepper, salt, sugar, and vinegar. Then grill them until done.
