What is a Philly cheesesteak?
A Classic Philly cheesesteak is a sandwich that is made from thinly sliced steak (tender) with melted cheese on a sub sandwich roll. 

There are literally hundreds of versions of this sandwich including Philly cheesesteak sloppy joes but the best way to make one is to use the classic ingredients well and not too much cheese sauce. 

Any leftovers, you can also reheat the cheesesteak.
Keep the dish simple and add sweated or caramelized onions and green bell pepper for a little added flavor.

Yes, you can use turkey, chicken, and pork.

What is the best cheese to use for a Philly Cheesesteak?

The melted cheese is a fundamental ingredient for this American cheesesteak. Look for a cheese that is not too strong in flavor and has medium consistency when melted.

The great thing about Philly cheesesteak sliders is they are fast and easy to make – it is such a simple recipe made with beef, and ground beef, and all made in less than half an hour. I love experimenting also with other flavors like Italian seasoning, Worcestershire sauce, and even cream cheese.

You can also use Cheese Whiz or American cheese. Provolone is probably the best cheese for this steak sandwich.

Cheesesteaks can be served with or without onions. Let me tell you a secret. The onions are my sandwich secret ingredient.

After you brown the roast all the seasonings and browned bits remain on the bottom of the Instant Pot liner. The onions are then sauteed and pick up all that delicious flavor. I greedily picked each diced onion off of my son’s plate and put them in my mouth. They are that good!

I chose a soft hoagie bun that was light and airy on the inside.

Add some beef broth or stock and cook the brisket in the electric pressure cooker for 30 minutes with 10 minutes of natural pressure release.

After that – take out the meat and saute it to get it tasty.

If you are eating low carb, you can still enjoy this fabulous recipe. Just skip the bread and it is still so delicious – what we did was make small Philly cheese steak low carb services by using the lettuce instead of the bread.

Instant Pot Ribeye Steak

In an instant pot the ribeye steak turns out super juicy, tender, and full of flavor.  Searing first gives the meat that beautiful sexy char. Then while basting with melted butter, rosemary sprigs and garlic, gives the steak the melt in your mouth kind of factor – what better thing to do with a pound of steak!

Ingredients

  • 1 pound ribeye steak
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 rosemary sprig
  • 1 tablespoon butter
  • 1 tablespoon oil

Sauce Ingredients

  • 1 shallot or onion
  • 1 rosemary sprig
  • 1/2 cup streaky bacon
  • 1 tablespoon new york style pepper
  • 1 tablespoon butter
  • 1 teaspoon sugar – to taste plus salt and pepper to taste
  • 1/2 cup cream
  • 1/2 cup red wine
  • 1 cup beef stock

Instructions

  • Pat the ribeye steaks dry and sprinkle generously with steak seasoning on both sides.
  • Turn Instant Pot to SAUTE HIGH setting and add oil.
  • Sear the steaks –  2 minutes each side
  • On the second side after one minute – add butter and rosemary
  • Using tongs, remove the steak and set aside to rest.
  • Add the garlic, shallots, bacon and butter
  • Cook until the onion goes clear
  • Add the red wine and deglaze the brown on the bottom of the pan
  • Let the red wine reduce by about 50% – takes about 2 minutes
  • Add pepper
  • Add the beef stock
  • Add the Steak
  • Cook on high pressure for 20 minutes and 5-minute natural release
  • Take out the steak and let the sauce mix reduce for about 2-3 minutes
  • Add the cream and stir well
  • Add some sugar and taste the sauce – then season with salt and pepper according to taste
  • Let the sauce continue to reduce until it thickens just a little and then remove from the heat – keep string well during this process

Most people would say make a Philly cheesesteak sandwich with sirloin or ribeye steak. Both these cuts are quite expensive.

Using a pressure cooker like an instant pot which makes the meat really tender you can use inexpensive beef. We used brisket and cooked it under pressure (plus browning first) – see the recipe above.
