One of the things that are great with an electric or stovetop pressure cooker is you do not have to stand over the stove stirring constantly or need to heat the chicken broth and add it gradually into the risotto.

The new way to make risotto that comes out just as creamy and just as delicious is the instant pot – and it’s so much easier, and faster with less washing up.

How to make budget leftover Risotto Recipes

When we have a roast chicken on a Sunday, be economical and you can probably get another meal out of it – this recipe makes enough for 4-6 people and it really is a budget risotto. You can equally use any leftover cooked chicken like chicken breast to make you chicken risotto recipe.

First strip the roasted chicken carcass – I mean, I really strip it and get everything off even the little bits or meat they all count. Start by cooking the onions for 2-3. minutes.

Then add half your mushrooms and a little bit of chicken for extra flavor as you cook and saute.

Next, add in the rice and stir to mix around all the sauteed juices and then add the chicken broth.

Add the white wine and cook for 10 minutes on high pressure followed by quick release.

Then add in the rest of the chicken, parmesan cheese, and parsley. Turn the instant pot back onto saute and stir while you mix all this up to a nice creamy risotto with mushrooms and chicken. Also, season with salt and pepper and taste chicken and mushroom risotto to make sure it is seasoned correctly.

Ingredients

  • 0.3 oz Dried mushrooms (porcini mushrooms) (or 2 cups fresh mushrooms )
  • 1 Onion (or 2 shallots)
  • 12 oz Arborio rice 342g
  • 24 oz Chicken stock 700 g
  • 2 tablespoons Parmesan cheese
  • 2 tablespoon butter
  • 1 pound Chicken Cooked (any cooked chicken)
  • 1 tablespoon Olive oil
  • ½ cup Wine
  • ½ tablespoon Parsley
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper

Instructions

  • Dice Onion and Slice Mushroom
  • Take all the chicken off your leftover roast chicken
  • Turn the instant pot onto sautee high and place in the olive oil and some butter and heat up
  • Add in the Onion and sweat it gently followed by half your mushrooms
  • Stir in the Arborio rice and mix it well
  • Then add the chicken stock and wine and mix gently (fresh herbs like Thyme if you have it)
  • Put on the lid and cook on high pressure for 10 mins and then release the pressure using the quick-release button on the instant pot- be careful as the steam is very hot.
  • After Cooking Add in the all the chciken, parmesan cheese and parsley and gently stir again
  • Then gently mix in the butter and stir gently - season with salt and pepper and taste to check the seasoning is ready
  • Now you are ready to plate up

Notes

This dish can also have bacon bits added for extra flavor and it freezes really well.
