Ingredients

  • 2 lbs beef sliced to about 1 inch thick 1kg
  • 1.5 cups beef Stock
  • 1 Onion diced
  • 1 can diced tomato
  • 3 cloves garlic
  • 1 tablespoon ketchup
  • 2 tablespoons flour
  • 2 Bay leaves
  • 2 sprigs thyme
  • 1/2 pound mushrooms 200g
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 teaspoon cayenne pepper optional
  • 2 teaspoons paprika
  • 1 cup red wine
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil or vegetable oil

Instructions

  • Flour Coat the steak in flour by dipping both sides into a bowl of flour.
  • Heat Turn the Instant Pot on saute function High and heat the vegetable or olive oil. When the oil is hot, add to the Instant Pot round steaks.
  • Sear and brown the steaks on both sides. Approximate no more than 2 minutes each side.
  • Remove the steaks and set them aside.
  • Add onions to the oil and cook until they’re softened. 
  • Followed by the garlic. And cook for a further 1 minute.
  • Add the ketchup and red wine and deglaze by scraping off any brown bits from the bottom
  • Add the tomatoes, Worcestershire sauce, paprika, and if you like it a little cayenne paper.
  • Also, add salt and pepper for seasoning
  • Add the beef back in plus the beef stock and stir to mix all together
  • Add in half the mushrooms . (you can cook the other half later or saute these for topping and dish decoration.
  • Add fresh herbs like bay leaves and 2 sprigs of thyme and stir again
  • Put on the top and cook on high pressure for 30 minutes and 10-minute natural release.
  • Test the steak is tender and take it out and set aside
  • Here you can put in the rest of the mushrooms or saute them separately if you want to have them keep their shape for the presentation of the final dish
  • Turn the instant pot back onto saute and reduce the remaining liquid by approximate 30%
  • Taste and see if you need to add more sugar, salt, or pepper for the final seasoning.
