BBQ Beef Bourbon Brisket

Summer means barbecues and tasty meats. But what if you have no time - get all the flavor from our instant pot recipe. Many people say the sauce tastes like sauce from the blue ridge smoky mountains.
 
Both boast layers of complexity, which can be achieved only after prolonged periods of doting attention — whether it’s brisket smoked for hours over hickory wood or bourbon aged for years in a charred oak barrel.

Ingredients

Sauce Ingredients

  • 1/4 teaspoon Onion powder
  • 1/4 teaspoon Garlic powder
  • 1/2 teaspoon salt
  • 1 tablespoon Smoked Paprika
  • 1 pinch Cayenne Pepper
  • 1 cup Ketchup
  • 1/2 cup Vinegar
  • 1/2 cup Molasses
  • 1/2 cup Honey
  • 1/2 cup Bourbon
  • 2 tablespoons Brown Sugar

Beef Recipe

  • 3 pounds Beef Brisket 1.4 kg
  • 1 Onion
  • 5 cloves garlic
  • 2 Sprig thyme
  • 2 Bay Leaf

Instructions

  • Brown the brisket sides by setting the instant pot to sauté high temp
  • Set aside in a bowl to rest
  • Make the BBQ/bourbon sauce
  • Put all the sauce ingredients into the instant pot-stirring and mixing well
  • Bring it to a simmering boil by setting the instant pot to sauté high temp
  • Simmer for about 10 minutes stirring every 30 seconds. Simmer until the sauce mix starts to thicken you will also notice that the sauce also starts to darken in color just as it starts to thicken (see pictures below)
  • Now pour out the sauce into another bowl - leave a very small amount in the instant pot bowl to flavor the brisket
  • Cut the onion in half and place the two halves and the peeled garlic into the instant pot bowl
  • Pour in the beef stock and mix turning the beef to ensure that it is well wet
  • You can add a little more sauce on the top of the beef for flavor
  • Cook for 75 mins high pressure and 10 mins natural release pressure
  • Take out the cooked brisket and let it stand.  You can (but not absolutely necessary) put it in a roasting dish - using a brush cover the brisket liberally with sauce. Put in an oven for about 10 minutes to bake in the sauce at about 350 F or 180 C
  • Then carve and serve with your favorite side dishes 

Notes

This is a really flavorsome and you will be delighted and you can do it so easily in the pressure cooker.
