Greek Chicken And Prunes Instant Pot

Ingredients

  • 8 skinless chicken thighs
  • 1.5 cups chicken stock
  • 1 pinch saffron
  • 4 tablespoons olive oil
  • 3 red onions finely sliced
  • 2 cloves garlic chopped finely
  • 1 ½ tablespoon sweet paprika
  • 20 pitted prunes
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Finely slice the onion
  • Finely chop the garlic
  • Turn on the instant pot and when hot add 1-2 tablespoons of olive oil
  • Then add the onions and garlic and cook then for about 3-5 minutes
  • Then add all the other ingredients with the paprika first and some of the chicken stock
  • Add in the Rest of the Chicken Stock plus the salt and pepper and stir again
  • Next, add about 10 strands of saffron and the prunes and stir gently but well
  • Put the lid on the instant pot and cook for 12 mins with 10-minute natural release
