Ingredients
3chili
2stalks lemongrass
10candlenutsif no candlenuts use macadamia nuts
1thumb galangalif no fresh use powder 1 tsp
1thumb ginger
5clovesgarlic
2french shallotsor 4 small shallots
1star anise
1tablespoonsweet soy saucekecup manis
1tablespoonbrown sugar
1teaspoonsalt
1teaspoonpepper
2.5cupswater
2lbsbeef
2bay leaves
4kaffir lime leaves
2tablespoonsoil
Instructions
Dice the beef to evenly sized pieces
Cut and prepare the lemongrass, galangal, ginger, chili, and shallots. Also just add in the garlic and candlenuts (if you do not have candlenuts use macadamia nuts)
Blend for approximately 3 minutes - until a smooth paste. You can add a small amount of water to help mixing and therefore make the paste smooth
Turn on the instant pot to high saute, wait till it shows hot (about 4-5 minutes) and then add a little oil ( 2 tablespoons) and cook the paste for about 3 minutes.
Crush the bay and kaffir lime leaves in your hand and add them to the paste while still stirring.
Next, add the beef and stir well to mix.
Add water, salt, pepper, sugar and sweet soy sauce and stir in
Put on the lid and cook for 30 mins with 10 minutes natural release
After cooking then you are ready to plate up - we served this with a side of rice
