Bacon Potato Salad with Chorizo, Chives and Parsley

Ingredients

  • 1 pound baby or new potatoes
  • 1/4 pound chorizo
  • 1/4 pound bacon
  • 1/2 cup parsley
  • 1/4 cup chives
  • 2 tablespoons of your favorite mayo
  • 1 teaspoon of hot sauce optional
  • 1/2 teaspoon honey
  • 1 teaspoon salt and pepper to taste

Instructions

  • Cook the potatoes - see our recipe here
  • Cook the bacon nice and crispy - see our recipe here
  • Slice the chorizo
  • Dice the chives and parsley
  • Turn the instant pot to hot saute and cook the chorizo for about 3-4 minutes
  • Add the bacon (break into smaller pieces first)  and cook for a further minute
  • Make the salad dressing by stirring together mayo, hot sauce (optional) and honey
  • Drizzle the salad dressing over the potatoes
  • Sprinkle the herbs over the potatoes
  • Stir gently to mix all together
  • You are ready to serve

Serve warm or cold.
