Ingredients

  • 1 pound potato Waxy Type Is Best
  • 1 cup onion finely diced
  • ½ pound corned beef
  • 2 tbsp unsalted butter
  • 1 tbsp chives finely diced
  • 1 tbsp parsley finely diced
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 eggs
  • 1 tbsp olive oil

Instructions

  • Place your pan or cast iron skillet over medium heat. Melt the remaining butter with a little olive oil and swirl to coat the bottom of the pan. Add the onions and cook till they turn clear
  • Add in the cooked potato and cook until they are golden brown
  • Next add in the cooked corned beef and cook, turning occasionally and all is nice and hot. Take off the heat and set aside
  • Now in a separate pan - cook your two eggs, for presentation we like sunnyside up, but make them your favorite way, even a poached egg is great.
  • Serve Irish corned beef hash with a fried or poached egg over each portion and garnish with chopped chives.
