- 1 pound potato Waxy Type Is Best
- 1 cup onion finely diced
- ½ pound corned beef
- 2 tbsp unsalted butter
- 1 tbsp chives finely diced
- 1 tbsp parsley finely diced
- ¼ tsp salt
- ¼ tsp pepper
- 2 eggs
- 1 tbsp olive oil
Place your pan or cast iron skillet over medium heat. Melt the remaining butter with a little olive oil and swirl to coat the bottom of the pan. Add the onions and cook till they turn clear
Add in the cooked potato and cook until they are golden brown
Next add in the cooked corned beef and cook, turning occasionally and all is nice and hot. Take off the heat and set aside
Now in a separate pan - cook your two eggs, for presentation we like sunnyside up, but make them your favorite way, even a poached egg is great.
Serve Irish corned beef hash with a fried or poached egg over each portion and garnish with chopped chives.
