Gravy if made with freezing in mind is actually a very versatile ingredient of a big dinner menu. You can freeze it in a multitude of ways for example in ice cube trays and then pop them out when you need them. Or pour it into freezer bags and store it in the freezer.

It’s important to note that freezing doesn’t destroy the flavor. Plus, it makes for a great treat on those cold winter nights when you just don’t feel like cooking the gravy. It is one less step you need to do.

1: Cool the Gravy

The first step is to cool the gravy down so it doesn’t curdle. To do this, place the gravy into a bowl and set it in the refrigerator for at least 30 minutes. This allows the fat to separate from the liquid and prevents it from separating again later when reheated. You can choose to keep the fat or discard it. Remember though there is a lot of flavor in the fat.

2: Get a High-Quality Airtight Container

Unless you are going to reuse the gravy with a few days do use the gravy container for freezing. It will let the air in and ice crystals will also grow diluting the gravy.

Gravies are notoriously difficult to store because they tend to separate into layers when frozen which is why we cool them first. 

To prevent this from happening, I recommend freezing your gravy in airtight containers. These containers should be made of BPA freezer-safe plastic.

I’ve tried several different types of containers, and I found that the best ones are the ones that come with rubber or soft plastic inside the lids. Some containers have lids that aren’t airtight.

3: With Tape – Write the Gravy Type and Date on the Cover

The cover should be written on some masking tape with a permanent marker so it doesn’t come off during storage.

It is so easy to forget when you made the gravy, particularly if you have multiple batches frozen. Also if you have different types of gravy for example sausage gravy or pepper gravy you will struggle to see which one is which after it is frozen.

Place the container in the freezer on a flat surface. Once the gravy has frozen them you can move it to another part of the freezer.

I recommend freezing them in ice cube trays. Simply place the frozen cubes into freezer bags and label them “gravy.” Then, when you’re ready for a quick meal, just pop out one of the cubes and thaw it.

If you don’t have any ice cube trays, then simply line a baking sheet with parchment paper and pour the gravy into a ziploc bag. Seal it up and lay it flat in the freezer. After 1 hour, remove the bag from the freezer and cut off a corner. Pour the liquid into the tray and return it to the freezer. Repeat this process every hour until all the gravy has been frozen into cubes.

If you see any discoloration, don’t worry — simply reheat the gravy and stir it up again. It should come back to its original consistency. However, if it smells bad then put it in the bin.

Can You Freeze Gravy Made with Cornstarch?

If you want to freeze gravy made with cornstarch, then yes, you can.  It will keep for at least 6 months.

Can you freeze gravy made with flour?

Yes! Just follow the same process above but instead of using cornstarch, use flour. The starch granules won’t clump together so you won’t have to worry about them getting stuck in the gravy after it’s frozen.
