Ingredients:

  • 1 lb jalapenos (red) peppers or chili peppers
  • ½ lb serrano (red) peppers 
  • 5 cloves of chopped garlic
  • 3 tablespoons of brown sugar
  • 1 tsp of sugar
  • 1 tsp kosher salt
  • around a third of a cup water
  • white vinegar around half a cup

Directions:

1. Prepare the main ingredients by washing all the peppers and chopping out the stem. Retain the seeds to maximize the spicy flavor. 

2. Place the red jalapeno peppers or chili peppers to a food processor and blend them with the rest of the ingredients ( garlic, brown sugar, salt, and water) until smooth. 

3. Transfer the processed chili into a large airtight container. Cover it tightly and make sure to store it away from direct sunlight. Store for 3-4 days, allowing fermentation to process well. Stir once a day. 

4. Blend the fermented chilis again with vinegar. Then, strain and discard the skins, seeds, and pulp.

5. Place the strained chilis into the saucepan and boil it over medium heat for 5 minutes. 

6. Once you achieve your desired thickness, let it cool and transfer into an airtight container or Maison jar. Place in the fridge if not consumed immediately.
