  • 5 lbs. beef, ground
  • 2 lb. pork, ground

  • 2 cups bread crumbs, unseasoned 
  • 2 cups buttermilk

  • 2 teaspoons kosher salt
  • 1 tablespoon fresh black pepper, ground

Sauce:

  • A choice of pesto, marinara, garlic spread, or creamy Italian dressing.

Directions

1. Pre-heat oven to 375 degrees.

2. Combine the eggs, buttermilk, and breadcrumbs in a mixing bowl and let it rest for 5 to 8 minutes.

Ingredients

  • 5 lbs. beef, ground
  • 2 lb. pork, ground
  • 2 cups onions, diced
  • 2 cups garlic, thinly sliced
  • 5 (28 ounces) 28-ounce cans whole tomatoes
  • 6 tablespoons chopped basil, plus 1 large basil sprig
  • 4 egg yolks, beaten
  • 2 tablespoon breadcrumbs
  • 1 cup olive oil
  • 2 lbs spaghetti noodles
  • 1 cup whole milk
  • Nutmeg (to taste)
  • Fresh ground pepper (to taste)
  • Salt (to taste)
  • 6 tbsp. freshly grated Parmigiano-Reggiano cheese, plus more for serving

Directions

1. Prepare a large mixing bowl and mix the ground meats with 6 tablespoons of Parmigiano-Reggiano cheese, 2 tablespoons of salt, 2 tablespoons of pepper, 6 tablespoons of chopped basil.

2. Form the meat into golf ball sizes and transfer it into the baking sheet. Cover and chill for 30 minutes. 

3. Pulse the tomatoes in a food processor until finely chopped. 

4. Prepare a large saucepan and heat the olive oil. Add the remaining garlic and stir fry until golden brown. Add the chopped tomatoes, pepper, and basil sprig. Bring to simmer over moderate heat. Let it thicken for about 25 minutes. Discard the basil sprig and season with salt and pepper to taste.

5. Heat the remaining olive oil in a large skillet. Cook the meatballs in batches and transfer them into the tomato sauce. Let it simmer until cooked. 

6. Discard the excess oil and add 1 cup of water over high heat. Cook for 4 minutes. Pour over into the tomato sauce. 

7. in a separate large pot, boil the salted water and cook the spaghetti until al dente. Drain and return the noodles to the pot. 

8. Pour in tomato sauce just enough to coat the noodles. 

9. Transfer into large shallow bowls. Spoon the meatballs and remaining tomato sauce into the spaghetti.

10. Sprinkle with chopped basil and grated cheese. Serve.

  • 3 lbs ground beef
  • 1 cup onion, finely chopped
  • 1 1/2 clove garlic, minced
  • 3/4 cup parsley leaves, finely chopped
  • 2 large eggs
  • 1 teaspoon sriracha
  • 2 tablespoon tomato paste
  • 2 1/4 cup breadcrumbs
  • 3/4 cup whole milk
  • 3/4 cup Parmesan cheese, grated
  • 3 teaspoons Kosher salt
  • Freshly ground black pepper

Directions

1. In a mixing bowl, combine the breadcrumbs and milk. Set aside to absorb the milk until soggy. 

2. In a separate large mixing bowl, whisk the salt, egg, Parmesan cheese, and parsley. Also, add ground black pepper to taste. (Here you could also add red pepper flakes if you like spicy meatballs and a tablespoon of soy sauce) Whisk to combine properly.  But do not overmix as you want a tender meatball.

3. Add all the ground meat to the egg mixture. Thoroughly mix it by using your hands.

4. Add the garlic and onions to the breadcrumbs mixture. 

5. Prepare the baking sheet and pinch off a piece of the beef meatball mixture and roll it with your hands to form a bite-sized meatball. Make sure the meat does not stick or leaves the baking sheet after forming them. 

6. Cook the meatballs by using the oven to make baked meatballs or cook them directly in the sauce for that perfect meatball. (Add a little bbq sauce for extra flavor optional) For the oven, broil it for 25 to 30 minutes until browned. If you opt to cook it directly in the sauce, prepare the marinara sauce to a simmer and add the meatballs to the pan. Cover and simmer for 40 minutes. 

7. Serve warm. (you can also keep your crockpot meatball warm by adding the sauce and setting the crock pot to low)
