Meatloaf is traditionally thought of as a German, Scandinavian and Belgian dish. Some people say it is related to the Dutch meatball. 

American meatloaf has its origins in scrapple, a mixture of ground pork and cornmeal served by German-Americans in Pennsylvania since colonial times.

What is Meatloaf?
Meatloaf is a dish really suitable of an instant pot it is made of ground meat that has been combined with other ingredients and formed into the shape of a loaf, then baked or in our case pressure cooked.
The meatloaf is usually served with potatoes however it is really versatile. You can also use it with our special homemade bourbon bbq (barbeque) sauce that we have in our ribs recipe.

This can also be used in a roll for lunch with salad and can easily be frozen.

This dish really is a must try.

Key Ingredients for Pork and Apple Meatloaf 

Balsamic Vinegar

Balsamic vinegar, occasionally shortened to being called balsamic, is a very dark, concentrated, and intensely flavoured vinegar originally made in Italy.  It is made wholly or partially from grape must. Grape must is freshly crushed grape juice with all the skins, seeds and stems.  It adds a nice sharp taste to a dish.

Fennel Seed

Fennel seed is an oval-shaped seed, and once dried takes on a greenish-brown color.  They have a wonderfully sweet and subtle licorice-like taste. Because of this, they are often confused with aniseed.

What can you uses as a binder in meatloaf

Breadcrumbs or oats are the most commonly used binders and they do an excellent job at it so that they will come handy for a meatloaf recipe. You can consider also Cheese, Eggs, and Egg Whites or even Olive oil.  However, we use breadcrumbs and eggs in this recipe.

Assemble All Ingredients

It really does help to get organised by getting all or your ingredients assembled. Why - because then you can focus on following the recipe rather than having to pause and go off to find another spice or something.

For ingredients that can be measured - I really to like to weigh them out also so again there is one less thing to do when you actually start cooking. These small white bowls I use are really cheap and you can get them on amazon for just a few dollars. 

Grate the Apple

Using a grater and its large-sized holes, greater the apple.  If you do not have a green apple any other cooking apple will be fine also.

Mix The Meatloaf

Put all the ingredients except barbeque sauce and beef stock in a pot or steel bowl and mix well to form a loaf shape. 

Here you can add a pinch of cayenne pepper just to enhance the flavors as you mix.

Put on BBQ Sauce

Put on the barbeque sauce onto the meatloaf for flavor before cooking- we put ours on before we placed it in the pressure cooker.

Put the Meatloaf in the Instant Pot

Put the formed meatloaf on a sheet of baking paper cut to size on the trivet. Our instant pot trivet has handles which make it great to lower into the instant pot easily. However, you can also make a strip of aluminum foil x 2 that you can use at either end of the meatloaf and lower it into the pressure cooker from the top.

Prepare the Meatloaf for Plating

I really like the flavor and the look of the topping and barbeque sauce on the meatloaf. - Using a spoon carefully layer the caramelized onion and bell pepper on to the meatloaf.

Plated and Ready to Eat

This meatloaf was delicious and moist with heaps of flavor.
It is pretty easy to make and can serve up to 6 people.

Instant Pot Recipe

Pork Apple Meat Loaf

Preparation 30 minutes
Cooking 30 minutes
Serves 4 people
1150 calories 

Ingredients

2 pounds minced (ground) pork and veal 
1 ½ cup (150g) breadcrumbs 
1/2 cup milk 
2 eggs 
3 teaspoons fennel seeds 
1 pinch cayenne pepper
 1 medium green apple grated 
1 onion grated 
2 cloves garlic crushed 
½ cup freshly chopped flatleaf parsley 
1 teaspoon sea salt flakes 
1/2 teaspoon cracked pepper 
2 tablespoons barbecue sauce 
1 cup beef stock 
Topping 2 tablespoons barbecue sauce 
1 tablespoon olive oil 
1 onion thinly sliced 
1 large red capsicum (bell pepper) thinly sliced 
1 tablespoon brown sugar 
1 tablespoon balsamic vinegar 

Method

1-  Put all the ingredients except barbeque sauce and beef stock in a pot or steel bowl and mix well to form a loaf shape 
2-  Put the formed meatloaf on a sheet of baking paper cut to size on the trivet
3-  Into the instant pot bowl pour in the beef stock 
4-  On the trivet using the handles lower the meatloaf on the backing paper into the instant pot bowl 
5-  Paint or place the barbeque sauce onto the meatloaf. 
6-  Put on the lid and set the pressure to high and set the timer 35 minutes and also allow 10 minutes of natural pressure release. 
7-  After the meatloaf is cooked and spread the remaining barbeque sauce on the top of the meatloaf. 
8-  Make the topping while the meatloaf is cooking Heat oil in a frypan over medium heat and add the onions and sweat them for about 10 minutes until they change color. 
9-  As the onion starts to cook add in the capsicum (they cook much quicker than onions) and continue to cook 
10- Add the brown sugar and balsamic vinegar and stir to ensure all the sugar has dissolved. 
11- Now put the meatloaf on a plate and cover the top with the onion capsicum topping mix and you are ready to serve.

Tips

You can also serve the meatloaf with mashed potatoes, pasta, or even french fries. 

You can also dress with wilted spinach. The excess meatloaf can also be frozen
