You can use whatever bacon you like here. I used thick-cut applewood smoked bacon because it’s delicious. If you want to add some flavor, try adding a little maple syrup and/or Dijon mustard. Finely diced chives or green onion are also great for garnishing sheet pan bacon & eggs.

Here’s what we found:

One sheet pan of bacon and eggs will easily feed 4 people and generously. My wife said that it would feed 6, but when catering to a crowd, it is always better to over cater.

Four sheet pans of bacon and eggs will feed 16 people, with a little leftover.

Five sheet pans of bacon & eggs will feed 20 people, giving some guests seconds.

  • 8 eggs
  • 1 tbsp canola oil
  • 10 Bacon
  • 1 tsp green onion

Instructions

  • Turn the oven temperature up to 400 degrees Fahrenheit. Spray some cooking oil on a sheet pan and lightly coat it. Greasing the foil and then lining the baking or sheet pan. This makes cleanup a breeze.
  • Arrange the bacon on the sheet pan in a single layer without overlapping the pieces. This enables them to cook evenly and crisp up a little.
  • Cook the bacon in the oven for 10 to 14 minutes, or until it reaches the desired crispiness. Depending on how crispy you want your bacon, adjust the cooking time accordingly. Now when the bacon is around 5 minutes away from being, take the pan out of the oven.
  • Take care not to burn yourself on the hot sheetpan or baking sheet. Make the bacon into squares - I like four squares with two eggs per square, but you can make six squares.
  • Return the baking dish with the bacon and eggs to the oven to bake for another 5 minutes, or until the egg whites have cooked and set.
  • Decorate with chopped parsley.
  • Season with Salt & pepper to taste, and if you are into hot food, a few red pepper flakes give it a Christmas look and feel with the green chopped parsley.
