Cook the Chorizo

First start by setting the instant pot to “hot” saute and brown off the chorizo.

Next put in the crispy bacon and stir for a further 1 minute. If the instant pot bowl spins when you stir, hold the top with a paper towel or similar, as you see in the photo above.

Next, finely dice your herbs – we are using parsley and chives. But you can also add your favorite other herbs if you have them.

We used a mayo base, some hot sauce, honey and seasoned with salt and pepper to make our potato salad dressing. Do not forget to taste for the correct seasoning level before you put on the salad.

  • 1 pound baby or new potatoes
  • 1/4 pound chorizo
  • 1/4 pound bacon
  • 1/2 cup parsley
  • 1/4 cup chives
  • 2 tablespoons of your favorite mayo
  • 1 teaspoon of hot sauce optional
  • 1/2 teaspoon honey
  • 1 teaspoon salt and pepper to taste


  • Cook the potatoes – see our recipe here
  • Cook the bacon nice and crispy – see our recipe here
  • Slice the chorizo
  • Dice the chives and parsley
  • Turn the instant pot to hot saute and cook the chorizo for about 3-4 minutes
  • Add the bacon (break into smaller pieces first)  and cook for a further minute
  • Make the salad dressing by stirring together mayo, hot sauce (optional) and honey
  • Drizzle the salad dressing over the potatoes
  • Sprinkle the herbs over the potatoes
  • Stir gently to mix all together
  • You are ready to serve

What kind of potatoes to use for a potato Salad?

I used “baby” or “petite” Yukon golds. You don’t need to peel them, and they’re perfect for potato salad.  However we did peel them and we also made some herb and garlic butter for another dish. You can certainly use a different variety of potatoes and just cut them into bite-size pieces. I do recommend not using Russets as they can fall apart (not good for any potato salad). 

How Do I make a healthy potato salad?

If you’re looking to have a health-filled  potato salad, swap  the mayo with plain 0% Greek yogurt.  Also, use no fat on the bacon and all fresh herbs and spices!

Mayonnaise or Salad Dressing for Potato Salad?

Mayonnaise is what I prefer it is not as sweet as a salad dressing like Miracle Whip has sweetness already added to it.
